The Dimples stitch is one of my favorites because it comes together so quickly. It involves slipping a lot of stitches which makes some rows fly by. It is also a very textured stitch with high squishability and stretch.
Due to the thick but stretchy texture, I have used it for pillow cases and hats. I feel like it's that perfect combination of warm and soft. However, It is not reversible so it is not suitable for all projects. Although, the wrong side also has it's own visual interest that I kind of like so it could work on a reversible project if you like each side to be a unique texture.
Since this stitch only involves knits, purls, and slipping stitches, I feel like knitters of all levels could master it quickly. It could even be a good transitional stitch for someone hoping to learn lace techniques soon.

Abbreviations:
wyif = with yarn in front (like you're preparing to purl)
wyib = with yarn in back (like you're preparing to knit)
sl = slip (just slide stitch onto working needle like you do to finish a stitch)
Straight Needles Pattern:
- Row 1 (RS): *K1, wyib sl 1; rep from * to end
- Row 2: *Wyif sl 1, P1; rep from * to end
- Row 3: Knit All
- Row 4: Purl All
- Row 5: *wyib sl 1, K1; rep from * to end
- Row 6: *P1, wyif sl 1; rep from * to end
- Row 7: Knit All
- Row 8: Purl All
